For early risers there's one destination that should be checked out while you're in Tokyo; Tsukiji. The Tsukiji Market is best known as the world's largest fish markets, handling over 2,000 tons of marine products per day. The sight of countless kinds of fresh fish, shellfish and other seafood and the busy atmosphere of scooters, trucks, sellers and buyers hurrying around, make Tsukiji a special treat for all on lookers. This guided tour is not your average sightseeing tour, it is a chance to see first hand the inner-social workings of a deeply rooted fish loving culture. Not only will you get a chance to observe the immense volumes and exotic kinds of sea-life in the biggest wholesale fish and seafood market in the world and also one of the largest wholesale food markets of any kind, but you also get the opportunity to see the unique craftsmanship of the Tsukiji workers, many have preserved their family trade and tradition for generations. From the large tuna fisherman to the skilled sushi chef, Tsukiji is a place of tradition.

Nowadays the auctions usually end around 6:30AM. Afterwards, the purchased fish is either loaded onto trucks to be shipped to the next destination, or on small carts and moved to the many shops located inside of the market. There the shop owners cut and prepare the products for retail. In case of large fish, tuna and swordfish, cutting and preparation is elaborate. Frozen tuna and swordfish are often cut with large band saws, and fresh tuna is carved with extremely long knives (some well over a meter in length) called Oroshi hocho, maguro-bocho, or Hancho hocho in preparation for restauranteurs to select the finest and freshest ingredients. We conclude our visit of Tsukiji with a fresh sushi breakfast, sampling the freshes and most delicious sushi in the world.

Note: *Wearing nice clothes, sandals and high heeled shoes are not recommended as the floors are often wet, slippery and smell of fish. Also smoking, touching the fish and taking flash photography are prohibited in the market. Furthermore some areas are restricted to authorized personnel only.
